How egg production is legislated in Alberta:
The government here in Alberta controls our egg supply tightly with what's called a quota system, meaning that if we want more than 300 lay hens, we would have to purchase the right to do that. For this reason, we have limited availability of our eggs, and may have to limit weekly purchases from time to time to make sure there are some for everybody.
How eggs are treated before they are sold in Alberta:
We wash our eggs and then inspect for cracks, weigh them and then finally place them into cartons and refrigerate them. Licensed egg grading facilities first wash, inspect for cracks, candle through a light to inspect the insides, weigh and size (grade) their eggs, before they are placed into egg cartons and refrigerated. Currently, all of the facilities that are licensed to grade eggs only purchase from producers and then resell them, creating two extra steps in the supply chain. Because we want to directly interact with our customers and reduce the length of the supply chain, our eggs are considered uninspected, and are only available for sale to customers, not to restaurants or stores. They go directly from our farm to your table!
